vegan taco bowl

Craving mexican? Love avocados?

Here's the solution in a recipe made for two!


1 can of black beans (bpa free can)

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp cumin

2 handfuls of kale (bc i love kale but 1 handful if you don't love it)

1 avocado

1 lemon

1 radish

1 jalapeño

1 bag of gluten free tortilla chips

red jalapeño salsa (optional)

cilantro (optional)

1. Cut up your avocados, lemon, radishes, and jalapeños.

2. Pour black beans into pot and heat on medium. Add cumin, garlic powder and paprika. Add kale and cook for 1-2 minutes, mixing the kale under the beans.

3. Transfer beans and kale into two seperate bowls.

4. Add your toppings (avocado, radish, jalapeño, chips, salsa etc).
