vegan chocolate truffles

Ingredients:


1 cup dates

1/4 cup cacao powder

1/2 cup almond flour

1/4 cup maple syrup

3/4 tsp vanilla extract


optional (coating):

cacao powder

shredded coconut







Directions:


First, let your dates soak in boiled water for 5-10 minutes.


Next, add the dates (unpitted) to a food processor. Once the dates form a paste like texture, add the cacao powder, almond flour, maple syrup, and vanilla extract. Process until ingredients are fully combined.


Scoop one tablespoon of mixture at a time and roll into a ball until mixture is gone.


**If too sticky to roll, add more almond flour (recommend 1/4 cup at a time)









Optional : Roll truffles into shallow bowl of your choosing of cocao powder, shredded coconut, or both!













If you don't finish them all in one sitting, place in fridge.
