sweet potato pancakes



2 ingredients | 10 minutes


If you don't keep baked sweet potatoes stocked in the fridge, I highly recommend it.


Sweet potatoes are the best to have prepped - easy addition to any meal or even sprinkled with cinnamon as a snack!






Ingredients


- 1 medium baked sweet potato

- 2 eggs


optional:


- 1 tsp cinnamon












Combine ingredients into either a blender or food processor.


Blend until smooth.


Heat nonstick pan to medium-low heat.


Cook until golden underneath then flip - about 3 minutes on each side.


Repeat with remaining batter.






tips:


The smaller the pancake, the easier to flip!


Using two spatulas to flip will help them stay together!
