This cashew butter is most definitely, hands down, the best nut butter I have ever had.
**I have had a lot of nut butters**
The creamiest (OIL FREE) cashew butter feat a lil honey, cinnamon and chia seeds.
4 cups raw cashews
1 tablespoon raw local honey
1 teaspoon vanilla extract (optional)
3-4 dashes cinnamon (or as much as your heart desires!)
2 tablespoons chia seeds
Preheat oven to 350. Lay cashews on a baking sheet & roast for 10 minutes.
Let cashews cool for 5-10 minutes then move into food process. Process cashews for 10-15 minutes (taking breaks so you don't over heat your food processor).
The cashews will go through a process of being like a clay texture (imagine tahini before you put in that elbow work to make it creamy) then it will turn into a rough textured paste until eventually it will be the creamiest of creamy!! This may take more or less time than listed depending on the power of your food processor but I promise the end product will be very much so worth the wait!
Once your cashew butter is at the consistency you would like, add your honey, cinnamon and chia seeds and process until the ingredients are fully mixed. This should take more than 10 seconds!
Transfer your final creamy, dreamy butter into a sealable container.
(Preferably with some medjool dates!)
